I do not like brussels sprouts that are STEAMED. It's official.
The smell was like old socks, and the taste was almost as bad. When I was a kid, I would hide from my plate when I saw green leaves rolling around on top of the chicken. The bacon did help, but I usually just ate the bacon and avoided the sprouts, defeating the whole purpose of adding bacon.
As with many other things, I began to appreciate brussels sprouts as I grew older. I also discovered that steaming was not the only method of preparation. Since then, roasting has become my preferred method for cooking Brussels sprouts. The thin, brittle leaves char easily, giving the sprouts a nice, smoky flavor.

- Red pepper flakes 1 tsp (optional).

Pre-heat your oven to 350degF. Line a baking sheet with parchment paper. Trim off the ends of the sprouts, and remove any damaged or wilted leaves. You can cut large brussels sprouts in half.
Drizzle
Sprinkle the sprouts liberally with olive oil. Sprinkle the sprouts with salt and pepper, and toss them to coat.
Roast
Roast the sprouts in the oven until they are golden brown and soft on one side. Continue roasting the sprouts for 10-15 minutes after flipping them.
Add any extras for taste.

Variations
Brussels sprouts, as I mentioned earlier, are a unique side dish. Your imagination is the only limit to what you can do with brussels sprouts. You can add balsamic, garlic and onion powders, as well as herbs like rosemary or thyme, if you are lacking in imagination. Add ginger, soy sauce, or pancetta to give it an Asian twist.

Roasted Brussels sprouts: How to store them
If you want the sprouts to remain crisp, make sure you store them correctly. The short-term solution is to store them in the fridge. Allow the sprouts to cool down completely, then place them in a resealable bag or airtight container. The sprouts should keep in the refrigerator for up to four days.
You can freeze them if you do not think you will eat the cookies in this time frame. Let them cool down completely again. Arrange them on a baking tray in one layer. Place them in the fridge for a couple of hours until they become solid. It will stop them from clumping and ruining the texture. Store the sprouts for up to three months in a freezer bag or an airtight container.
Reheating sprouts that have been refrigerated in the oven for 5-10 mins at 350degF is possible. Frozen sprouts do not need to be thawed; they can simply be baked at the same temperature (say, for 10-15 minutes) without thawing. Be sure to keep an eye on the sprouts until they reach the desired crispiness.
